This lesser-known cut comes from the muscle that sits right under the front shoulder blade-- a good butcher can cut it from just the right part of the muscle, which gets less work than the rest of the shoulder, resulting in tender, juicy cuts that few ever get to enjoy.
Cut into long, skinny but thick pieces, this can be enjoyed in tacos & fajitas, as steak kabobs or bites, or just on the grill for a smaller portion of steak.
