Flat Iron Steak
1 whole flat iron/pkg (makes 2 steaks) | arrives frozen | ~ 1 1/4 lb
This little-known gem is a favorite of steak connoisseurs. It is second only to the tenderloin in tenderness (you can cut ours with your fork!), but it has a bolder, beefier flavor (similar to a New York Strip). Seared over the grill just like you would your old favorite, this will quickly become your new go-to.
Get it whenever you can though, because it's also a rare cut: a 1,500-lb steer only produces about 2-3 pounds of flat iron. It comes whole in a single piece, but can easily be cut into two or three steaks, depending on how many you're feeding (as pictured).
