Also known as the “butcher’s cut”, hanger steak is one of the most prized pieces of beef you can find– if you can find it, that is. Each steer only contains about a pound of this tender cut, which is why it’s so hard to find at the grocery store. Often, the butcher or the rancher keeps it (hence, the name)– but every once in awhile, we’ll share.
This cut is very versatile- you can toss it on the grill, marinate it, use it for taco night, broil or pan-fry it– just make sure it’s well trimmed. This cut is so tender and juicy, even the family “well-done-er” will get a juicy steak.
